The school principal 松永澄子 has been teaching udon classes for 30 years. She was very animated when explaining every steps from making dough to the finished product. She even joked about how udon keeps her young. 校長松永澄子已經教授製作烏冬30多年,她手舞足蹈地示範製作的每一個步驟,多年來對製作烏冬的熱情一直毫無減退,更開玩笑說烏冬令她保持年輕。The class began with rolling a prepared dough into a thin layer, then cut it into noodles. That’s what you will eat. Then prepare the dough for the next class because the dough will have to be rested, I think. 課程首先是把已經準備好的麵團壓扁,然後切成麵條(這是你的製成品)。然後再體驗製作麵團,可能需要時間發酵,所以你的麵團是留給其他人用的。When you finish your class which takes about 50 minutes, you will be presented a graduation certificate which a scroll with a rolling pin! 50分鐘的體驗烏冬製作課程有畢業證書和一條木製擀麵棍,十分實用。You may choose to take away your handmade udon or cook and eat right there and then. For dining in, you may choose the side dishes to go with your udon. 製作烏冬後,你可以選擇把 DIY 烏冬帶回家,或在學校內即煮即吃。如果在店內用餐,可以選擇配菜。There are two Nakano udon schools. One in Kotohira-cho which is at the shopping street of the famous Kotohira-gu shrine. The other is in Takamatsu city. Reservation is required for taking udon classes (min. 2 people).
