1898 創業至今的飛驒高山蕎麥麵本店

日本人早睡早起,通常去日本玩一早就出發,但最近發現有些舊城鎮的生活更悠閒,店鋪都不會開很早,晚上六時左右關門,營業時間很短。這也許是他們的養生之道。

一個天色晴朗的星期日,我一早出發漫步飛驒高山市,看看老街、朝市。早上九時許,所有店鋪都未開門,路上沒有幾個途人、沒有車。感覺有點奇怪,印象中高山市的舊街很熱鬧的,連招牌都沒有幾個。

Yet it was a nice walk with no tourists, no cars. Then I saw this “Hand made soba” red sign.
走在沒有遊客、沒有車、甚至沒有幾個途人的老街其實很舒服。然後被一個紅色的「手打蕎麥麵」招牌吸引。

Then I walked close to take a look at restaurant and found that it’s the original restaurant of Ebisu Soba since 1898.
走近看,發現是「惠比壽」蕎麥麵本店,創於1898年!

It was still early in the morning. The main chef was making noodles by the window.
早上還沒有開門,看見一位師傅在窗邊製作麵條。是真材實料地手做蕎麥麵。

Zaru soba (cold soba noodle) is the signature soba here. Ebisu Soba Restaurant is proud of carrying the traditional way of making noodles for 4 generations, using 75% of fresh grounded buckwheat flour to ensure the highest quality and low calorie. 
蕎麥冷麵是「惠比壽」的鎮店之寶,創業以來四代都是用同一個傳統方法手打蕎麥麵,採用新鮮食材,新鮮蕎麥麵粉比例達75%,比其他蕎麥麵的70%更健康、更高品質。

Visiting in the winter, I chose a hot noodle: Tempura soba, which is also a signature noodle in the restaurant. ¥1,420.
冬天來到,想吃暖胃的。我選了天婦羅蕎麥麵,也是人氣蕎麥麵。¥1,420一碗。

A friend ordered a Tororo Nameko soba with Nameko, grated mountain potato and mushrooms. ¥1,220.

Was it good? You bet. All ingredients were fresh, including the vegetables. Only in Japan I would have tempura. So fresh and crispy.
好不好吃?你話呢?這裏的蔬菜、麵和蝦都是新鮮現做。我只有在日本才會吃天婦羅的,十分鬆脆可口!
