7.1 DIY Summer Vegetarian Soup

Soup has been a traditional Chinese recipe to stay healthy, particularly for those living in Southern China. I recently came across a unique “7.1 Summer Vegetarian Soup” recipe in a Chinese Herbal Medicine Shop and would like to share.

The name of the soup “7.1” has double meaning. 1) July 1 is the middle of the summer in Hong Kong. 2) There are 7 main herbal ingredients. The naming was to make it easy.

Since the recipe is in Chinese, the translation of the ingredients may not be accurate. In case you are an English speaker who want to give the receipe a try. Please show the Chinese name of the ingredients when you buy them.

7.1 vegetarian soup 7.1 夏之素湯
The 7 ingredients are 芡實 Tamping, 淮山 Huaishan, 炒扁豆 Fried lentils, 五指毛桃 Five-finger Peach , 生薏米 Raw Glutinous Rice, 土茯苓 Tukahoe, 荷葉 Dried Lotus Leave. 50g each.
7種配料包括:芡實、淮山、炒扁豆、五指毛桃 、生薏米、土茯苓 、 荷葉。各一兩(50克)。

The main ingredients are 1 old Chinese cucumber, 2 corns and 15 water chestnuts.

Well, you also need 1/2 dried tangerine peel and 2 Candied dates.
還需要1/2個陳皮,和2粒蜜枣。

Soak the herbal ingredients for 30 mins. Then put them together with rest of the ingredients into a pot of 6-8 bowls/cups of water. Boil for 1-2 hours. Season a pinch of salt to taste.
煮法:老黃瓜洗淨,去核去囊,連皮切大件。荷葉略剪。粟米去鬚、切段。所有材料加6-8碗水,煲1-2小時。略加鹽即可飲用。

Diabetes may replace the candied dates with 羅漢果. This soup is not suitable for pregnant women and those in menstrual cycle.
有糖尿病可用羅漢果代替蜜棗。此湯不適宜孕婦或月事中的女性。
